{Good Advice) Annica of Annica’s Designer Cakes

Annica van Rensburg of Annica’s Designer Cakes has been in the cake business for over 10 years, creating designer cakes beautiful enough to be considered art. She offers advice on how to choose one of the important aspects of the wedding, the cake

Wedding cake trends for 2013
Choose metallic if you dare. It is elegant and sophisticated, and these opulent elements are soaring into the trend scene. The metallic touch will work beautifully for a classic bride who likes a touch of embellishment. Think white or cream, which is classy and refined, with chocolate brown and a hint of copper. Or, should you prefer a more vintage look, choose softer latte tones or varying hues of stone, with metallic champagnes and pearl/pewter pink. For the modern bride looking to incorporate metallic hues, go bold in black and gold.

Other hot colours that are trending now are emerald green and tones of blues, sapphire, violet, Monaco blue and even hints of indigo. Should you find yourself unable to decide, combine them all into trendy rainbow tones. The beauty of design is that your options are almost unlimited. And with a bit of tweaking and shaping, you can create a wedding cake perfectly matched to your special day.

Tips and tricks for the perfect cake
•    Decide on your cake three to six months before the wedding day or once colours, themes and décor ideas have been chosen. This leaves room for you to change your mind and will prevent you from feeling overwhelmed by choice.
•    Expect a cake tasting. This is important so that you know what you will be getting on the day.
•    Come to the tasting with an open mind. Sometimes the idea or picture of what you want and the practicalities are not completely compatible.
•    Include your groom. Even if it’s only in choosing the flavours. The cake is always more special when it reflects both of you.
•    Consider the cake as part of the main dessert. This will be more economical and means that more decadent options, such as mousses, can be chosen instead of just the traditional fruit cake.
•    Also consider cutting the cake between the ceremony and reception and serving it as a pre-reception snack.
•    This is your special day, and that is why your cake should be nothing less than a work of art.

Best tip
Go for different flavours – by having a new flavour in each tier, more tastes are considered and guests are inclined to eat more of the cake.
